Fiery Chicken Pita Wraps

How should I use my chilli oil? There are so many different ways to use your chilli oil just like this amazing chicken pita dish. It's so easy to make and ready in 20 minutes, but so full of flavour. 

Juicy, marinated chicken thighs, fresh cucumber-tomato salad, and a hit of Fuoco chilli oil all wrapped up in warm, toasted pita. This is the kind of dish that’s quick to make but bursting with flavour – perfect for a casual dinner or lunch that feels just a bit special.

Ingredients:

  • Chicken thighs
  • Yoghurt
  • Paprika
  • Garlic
  • Lemon
  • Oregano
  • Tomatoes
  • Cucumber
  • Mint
  • Parsley
  • Red onion
  • Fuoco crispy chilli oil
  • Pita bread

Method:

  1. Marinate the Chicken: In a bowl, mix 3/4 cup yoghurt, lemon zest, juice of 1 lemon, 1 grated garlic clove, salt, pepper, 1 tsp paprika, 1 tsp oregano, and a spoonful of Fuoco crispy chilli oil. Toss the chicken thighs in the marinade, making sure they’re fully coated. Pop the bowl in the fridge to marinate.
  2. Make the Salad: Smash up the cucumber (for that rustic vibe), chop it up, and add it to a bowl. Finely dice the tomatoes, slice the red onion, and chop up the parsley and mint. Toss everything together with a squeeze of lemon juice, a drizzle of olive oil, salt, pepper, and a sprinkle of paprika.
  3. Prepare Your Plate: Spread a base of yoghurt on your plate and drizzle with a little Fuoco chilli oil to bring some heat.
  4. Cook the Chicken: Heat a grill, griddle, or frypan over medium-high heat with a dash of olive oil. Add the chicken thighs and let them cook without moving them, so you get that perfect crispy exterior. Cook for 3-4 minutes per side until golden and cooked through.
  5. Toast the Pita: In a separate pan, heat your pita bread with a little olive oil until it’s soft and warm.
  6. Assemble: On your yoghurt base, pile on the grilled chicken, spoon over the fresh cucumber-tomato salad, and add the warm pita on the side.
  7. Serve & Enjoy: Drizzle with more Fuoco crispy chilli oil if you like it extra fiery, and dig in!
