Ingredients:
- 3 tbsp extra-virgin olive oil
- 2 pints cherry or grape tomatoes
- 2 tbsp tomato paste
- 3-4 garlic cloves, thinly sliced
- 1 tsp dried oregano
- 1 spoonful of Fuoco crispy chilli oil
- Salt, to taste
- 1 can Bold Bean Co Queen Butter Beans (with brine)
- 2 cups water or broth
- Cracked black pepper
- 1/2 ball mozzarella, torn (for garnish)
- Fresh basil, torn (for garnish)
- Lightly toasted focaccia bread (for serving)

Cook the Tomatoes: Heat olive oil in a Dutch oven or large stock pot over medium heat. Add the cherry tomatoes and cook for about 8 minutes, gently pressing to break them down as they release their juices.

Add Beans & Broth: Pour in the butter beans with their brine and add the water or broth. Bring to a gentle simmer and let it cook uncovered for 15 minutes, allowing the stew to reduce slightly. Adjust seasoning with salt and pepper if needed.
