Rustic Tomato & Butter Bean Stew

Rustic Tomato & Butter Bean Stew

A hearty stew that’s rich, comforting, and packed with bold flavours. Creamy butter beans, juicy tomatoes, and fragrant oregano come together with a touch of Fuoco crispy chilli oil for a spicy kick. Serve it with toasted focaccia and torn mozzarella for a cosy, satisfying meal.

Ingredients:

  • 3 tbsp extra-virgin olive oil
  • 2 pints cherry or grape tomatoes
  • 2 tbsp tomato paste
  • 3-4 garlic cloves, thinly sliced
  • 1 tsp dried oregano
  • 1 spoonful of Fuoco crispy chilli oil
  • Salt, to taste
  • 1 can Bold Bean Co Queen Butter Beans (with brine)
  • 2 cups water or broth
  • Cracked black pepper
  • 1/2 ball mozzarella, torn (for garnish)
  • Fresh basil, torn (for garnish)
  • Lightly toasted focaccia bread (for serving)

Method:

  1. Cook the Tomatoes: Heat olive oil in a Dutch oven or large stock pot over medium heat. Add the cherry tomatoes and cook for about 8 minutes, gently pressing to break them down as they release their juices.

  2. Add the Flavour Base: Stir in the tomato paste, garlic, oregano, and Fuoco crispy chilli oil. Cook for 3-4 minutes until fragrant. Season generously with salt.

  3. Add Beans & Broth: Pour in the butter beans with their brine and add the water or broth. Bring to a gentle simmer and let it cook uncovered for 15 minutes, allowing the stew to reduce slightly. Adjust seasoning with salt and pepper if needed.

  4. Serve: Ladle the stew into bowls and garnish with torn mozzarella, fresh basil, and a drizzle of Fuoco crispy chilli oil. Serve with toasted focaccia for dipping.

Simple, hearty, and with just the right touch of spice, this tomato and butter bean stew is a bowl full of comfort. Perfect for a cosy dinner or when you’re craving bold flavours!
